Pan-seared Curry Cod
Ingredients
Fish
- 4 Cod fillets 6oz fillets are perfect
- Salt & black pepper a pinch
Sauce
- 3 tbsp Curry powder
- 1 tbsp Seasoned Salt
- ⅓ cup Yellow onion
- ⅓ cup Bell Pepper
- 5 Cloves of garlic
- ⅓ cup Olive Oil to combine all ingredients
Instructions
- Sear the fillets on medium heat for 3 minutes on both sides until the fish is golden brown
- Allow the fish to rest while you prepare the sauce
- In the same pan, add your curry mixture to start "burning the curry" which is a Caribbean that means to bring out flavors and bloom the curry spices. Every minute mix the sauce around, so every spec is burned.
- After 3 minutes of burning, add 1/3 of water to the pan to loosen the mixture. Allow the sauce to cook for 5 minutes before adding the fillets.
- To thicken the sauce; mix the 1/3 water and 2tbps of flour in a measuring cup then add it to the curry while constantly stirring to avoid clumping. (This step can be skipped depending on your preference consistency)
- Once the fillets are added to the sauce, turn the heat to a low simmer and allow the fillets to marry with the curry for 10 minutes
