Pan-seared Curry Cod

This curry cod recipe is one of our favorite easy fish recipes at the moment. Try this seared cod with rice or mashed potatoes!

Fish
- 4 Cod fillets 6oz fillets are perfect
- Salt & black pepper a pinch
Sauce
- 3 tbsp Curry powder
- 1 tbsp Seasoned Salt
- ⅓ cup Yellow onion
- ⅓ cup Bell Pepper
- 5 Cloves of garlic
- ⅓ cup Olive Oil to combine all ingredients
Sear the fillets on medium heat for 3 minutes on both sides until the fish is golden brown
Allow the fish to rest while you prepare the sauce
In the same pan, add your curry mixture to start "burning the curry" which is a Caribbean that means to bring out flavors and bloom the curry spices. Every minute mix the sauce around, so every spec is burned.
After 3 minutes of burning, add 1/3 of water to the pan to loosen the mixture. Allow the sauce to cook for 5 minutes before adding the fillets.
To thicken the sauce; mix the 1/3 water and 2tbps of flour in a measuring cup then add it to the curry while constantly stirring to avoid clumping. (This step can be skipped depending on your preference consistency)
Once the fillets are added to the sauce, turn the heat to a low simmer and allow the fillets to marry with the curry for 10 minutes

Cod’s mild flavor makes it an excellent match for a wide range of sides. Here are a few ideas to complete your meal:
Steamed vegetables: Broccoli, asparagus, or Brussels sprouts with a sprinkle of garlic.
Rice or quinoa: A light, fluffy grain can balance the richness of the fish.
Fresh salad: A simple green salad with a citrus vinaigrette can add freshness and color to your plate.
Mashed potatoes: For a comfort food twist, serve your cod with creamy mashed potatoes.
In this case, I paired the cod with roasted mashed potatoes and green beans. These two components added another depth to the dish which enhanced the total flavor profile.
