Haitian Fried Chicken

Ingredients
  

  • 5-9 Drumsticks You can use any cut of chicken, but dark meat is the most tender
  • 2 cups Caribbean green seasoning
  • 1 tbsp Seasoned salt
  • 2 tbsp Chicken bouillon
  • 1 tbsp Complete seasoning
  • 5 cup Vegetable oil
  • ½ White onion
  • 1 Bell pepper

Instructions
 

  • Wash chicken with lime, salt, and vinegar. This helps remove any impurities and refreshes the chicken.
  • Score the drumsticks, scoring meat allows for the flavors to penetrate the chicken and also helps the chicken cook more even.
  • Next, add the seasonings to the chicken, mixing them thoroughly.
  • Let the chicken marinate for at least 30 minutes, if you can do this overnight that is better.
  • Place the chicken in a large pan to steam for 15 minutes. This step will help lock in moisture before deep frying the drumsticks.

  • Remove the chicken from the pan and allow it to cool.
  • Use a large pot to fry your chicken, you'll know your oil is ready if you place an onion in the pot and you see rapid bubbling.
  • Put steamed chicken in frying oil. Fry to crispy perfection

  • Since you steamed the chicken, frying should not take that long
  • Place chicken on a cooling rack or a bowl with paper towel to drain excess oil
  • Top the chicken with the chopped bell peppers and onions. Allow this to stick for 10-15 minutes in the oven, so the fresh vegetable flavors can be absorbed by the chicken

Notes

If you want a sauce, use the remaining seasoning from the missing bowl, add it to a small pot with water and bring the contents to a boil. Then simmer on low heat for 10 minutes. Serve once done.
